Penne Chicken with Sun-Dried Tomatoes

Ingredients

  • 2 cubs uncooked penne pasta
  • 3 oz sliced mushrooms
  • 1/2 Tb butter
  • 1 15-oz jar sun-dried tomato Alfredo sauce
  • 1 pkg (9 oz) ready-to-use Southwestern chicken strips (in this case, we used the same amount of skinless boneless chicken breast)
  • 1 cup oil-packed sun-dried tomatoes, drained and chopped
  • 2 green onions, sliced
  • 1/8 tsp pepper
  • 3/4 cup shredded Parmesan cheese

    1. Cook pasta according to package directions

    2. Meanwhile, in a small skillet, saute mushrooms and butter--set aside

    3. In a large bowl, combine the Alfredo sauce, chicken, tomatoes, green onions, pepper, mushrooms and butter.

    4. Drain pasta; stir into chicken mixture

    5. Spoon into a greased 9x13 inch baking dish

    6. Cover and bake at 350 degrees for 45-50 minutes or until heated through

    7. Uncover, sprinkle with cheese

    8. Bake 5-8 minutes or until cheese is melted

    Makes four servings (in our case, it made five servings)

    The approximate calorie count for this dish is 1,765 (440 calories per serving)
