Zesty Beef Stew

Ingredients:

  • 1 lb beef stew meat, cut into 1 inch cubes
  • 1 pkg (16 oz) frozen mixed vegetables, thawed
  • 1 can (15 oz) pinto beans, rinsed and drained
  • 1 1/2 cups water
  • 1 can (8 oz) pizza sauce
  • 2 Tb medium pearl barley
  • 1 Tb dried minced onion
  • 2 tsp beef bouillon granules
  • 1/4 tsp crushed red pepper flakes

    The preparation of this couldn't be easier!

    1. In a 3 qt slow cooker, combine all the ingredients.
    2. Cover and cook on low 3 1/2 to 4 1/2 hours or until meat is tender

    There isn't a pic to post (yet)--we brought this to a July 4 celebration and it all went before I could take a picture! But I got to sample a small portion ahead of time and give this about an 8 on a 1-10 scale.
